Winemaking
At Ca’ Montalbano, we work for the most part on small batches, combining traditional craftsmanship with precise enological practices. Our still wines are fermented in temperature-controlled steel tanks to preserve freshness, varietal identity, and natural acidity. For maturation, only a limited selection of French oak barriques is used, always in multiple passages. This approach favors slow oxygen exchange without imposing heavy wood influence, ensuring longer refinement, extended bottle lifespan, and wines designed to be decanted for full expression.
Our Riserva Sangiovese and Sangiovese Superiore requires an even more rigorous approach in the vineyard. Vines are given minimal nutrition and almost no irrigation, forcing roots to penetrate the clay-rich soils in search of deep humidity and minerals. In the weeks leading up to harvest, a high cut of leaves is carried out to concentrate energy into the clusters, while exposure to sun and airflow enhances ripening and phenolic maturity. This deliberate “struggle” of the plant yields smaller, more concentrated berries with higher tannic structure and profound terroir-driven character. The result is a Sangiovese that not only reflects the vine’s resilience but also carries the unmistakable imprint of Brisighella’s soil in every sip.
For our bubbly wines, harvests are carefully staged: early picks ensure vibrant acidity and freshness, while later harvests contribute fruit depth and roundness. Fermentation includes a period of extended malolactic activity on the skins, enhancing structure and aromatic complexity. By November, the wines are transferred into 1,000-liter tanks for secondary fermentation and controlled maturation, developing pressure and balance over time. The result is a sparkling wine that unites crisp elegance with layered character, true to the Ca’ Montalbano philosophy of refinement through patience.

D’Amone – A Tribute to Val D’Amone
D’Amone takes its name from the historic Val D’Amone, the river valley once crossed by the ancient Roman Amone river, today known as the Lamone, which flows eastward to the Adriatic Sea. This Riserva celebrates not only the land but also its enduring connection to history, where fertile soils and flowing waters have nurtured vines for centuries.
Crafted from carefully selected handpicked Sangiovese grapes, D’Amone embodies the richness of its terroir with depth, structure, and elegance. Aged patiently, it reveals layers of dark fruit, fine tannins, and a lingering finish, a wine that honors the river valley from which it draws its name and inspiration.
Aperitivo Wines
For wines intended to capture the lightness and convivial spirit of the aperitivo tradition, harvest follows a different rhythm. Harvested using mechanized techniques, yet the high altitude of the soils and meticulous vineyard work ensure uncompromising quality. By selectively cutting away damaged grapes before harvest, only the healthiest fruit reaches the cellar.
This careful balance of altitude, climate, and labor produces wines that remain naturally crisp and vibrant, requiring minimal intervention after fermentation.
